Have you been keeping it dark and cool? Of course, I'm talking about olive oil. The olive oil was harvested and pressed in November of last year and this is starting to be that window of time, that wonderful moment when it's not new olive oil. It's perfect, balanced olive oil.
We have some wonderful olive folk here in Sonoma County and this is the time where we can really enjoy the fullness, the balance, the depth, the flavor, the nutrition, all the magic of our own olive oil. And as life goes along, what we have here is more and more dear to us. So, if you got some olive oil in this season, this is the moment to enjoy.
