Freshening. It sounds so, I don't know, clean. Actually, that's the term we use when a goat mommy is giving birth to a goat baby. And frankly, sometimes we call it goat blat because the thing comes out boom. And there's a little goat and they are the most adorable thing in the world.
This is a time of year where farmers where herds folk are really working hard to take care of those dear and lovely animals and where the new mothers have a lot of milk, and you know what that means? That means we get to have wonderful new fresh milk, goat cheeses, sheep cheeses, cow's milk cheeses because we have such a blessing of beloved and cared-for animals and the foods that come from them.
